Is this even possible with PlanetPress, and if so, how do I set my document up print this way?

Zane,

It's definitely possible to print variable data on two sides of your page, all you need to do is to create two pages and add your variable data (data selections, text objects, etc) to both pages.

If you're using N-Up specifically though, you have to "Double" your data first so that you get a front and a back, this can be done with the Metadata-Based N-Up or the Telescoping (downloadable) plugin in PlanetPress Workflow Tools.
